Japanese carving knives (Maru Kezuri Nomi) are used for carving patterns and geometric shapes. They feature multi-layered steel with a high-carbon edge for superior sharpness and extended cutting life. The handles are made of hardwood (Sakura). Models 1 and 2 have a single bevel, while models 3 and 4 have two bevels.
