Japanese conical stones are water-cooled sharpening stones specifically designed for restoring the sharpness of large carving tools such as gouges, chisels, and plane irons.

The conical shape of these stones ensures uniform contact on a variety of cutting profiles, which is particularly useful when the tool has curves or non-flat bevels. They are very popular with Western users for the speed and precision of the sharpening they provide.

These stones are immersed in water for a few minutes before use to become thoroughly saturated, which facilitates abrasion and limits abrasive particles on the surface of the tool.

Depending on the grain chosen, the use changes:
- 1000 grit: medium grit stone, suitable for classic sharpening phases — preparation of the bevel and shaping of the cutting edge.
- 4000 grit: fine grain stone, dedicated to finishing sharpening and deburring, for a smoother and more durable edge.

These stones can be dry ground on abrasive paper placed on a very flat surface (for example a thick glass plate) to ensure their flatness before use.
